How to Make a Frozen Pinapple Mint Caipi

It is Pineapple Mint Caipi drink time today! I came up with the Frozen Pineapple Mint Caipi creation last summer while trying to create a drink with a different concept of the Caipirinha to increase sales of the Leblon Cachaca. I hoped to show the versatility of cachaca comparing two totally different drink conceptions, while selling the product in liquor stores.

It was a huge success! The tropical flavors of the pineapple mixed with the fresh mint leaves and cream of coconut made in a frozen drink version added a tropical taste to the recipe creating a light and refreshing drink best enjoyed in the hottest days, I also noticed a lot of people would mention having mint available in their backyards or pot planted in their homes making really easy to produce the cocktail. It is a perfect option for relaxing on the beach or porch with family and friends.

The unique ingredients of this concoction would satisfy almost any palate. Whether you want to sit inside by the air conditioning or brave the heat outside, the Frozen Pineapple Mint Caipi is sure to cool you down and put a relaxed smile on your face.

Simple, easy and refreshing while using natural and organic ingredients, the way Miss Caipi likes to create her drinks!

Recipe

1 Serving Size

1 ½ oz of Cachaca, Vodka, Sake or Bourbon

2 tsp of cream of coconut

5 pineapple chunks

4 washed fresh mint leaves

1 cup of Ice

Combine all the ingredients in a blender and blend until you get a consistency. You can garnish with a pineapple chunk and mint leaves if you dare!

You can also do in  non alcoholic version replacing the spirit for 2 oz of water or in a full size blender adding the amount of ingredients depending on how many drinks you want to make it based on the one serving size recipe.
